Nanny's Macaroni & Cheese

2 cups uncooked elbow macaroni noodles
8oz bar of medium cheddar cheese
1/8 cup butter or margarine
2 eggs
2 cups 2% or whole milk

Preheat oven to 335 degrees. Spray Pyrex baking dish with a non-stick cooking spray. Nanny Cade always used a clear 2 1/2 quart round Pyrex dish. Boil noodles for 12-15 minutes. Meanwhile, dice cheese into small cubes. Strain cooked noodles and return to pot on warm unit (turned off). Add diced cheese to pot to melt. Add butter. Stir often. Hand beat 2 eggs and add them to the pot. Remove pot from unit after mixing well. Add 2 cups milk to pot. Pour mixture into Pyrex dish. Bake in oven 45 minutes to 1 hour. Dish is ready when light brown on top and on sides.

Raised in Stone Mountain, Georgia, cooking was one of my grandmother's passions. She was a traditional Southern cook who was always cooking, canning or freezing something in the kitchen. But, it wasn't just about the food. Nanny used her talent in cooking to spread good cheer to the people around her. She and my grandfather always opened their home (which usually started in the kitchen) to family, friends and neighbors. And it was common for Nanny & PaPa to take some of her goodies to their doctor's office staff or bank teller or grocery checkout clerk or others. Whenever my wife cooks up this dish, I'm reminded of the kindness my grandparents shared with those around them. When you stopped by Nanny's kitchen, you always left with a full stomach and a warmed heart. Please take some time to share a little good cheer with others this season.
