Austrian Jam Cookies

1/2 cup of butter - 1 stick, softened
1/2 cup sugar
1 teaspoon vanilla
1 egg yolk separated - keep egg white for later
1 1/4 cups sifted all-purpose flour
2/3 cup chopped almonds
Raspberry Jam

1. Beat butter, sugar, vanilla and egg yolk in a medium-size bowl until fluffy.
2. Stir in flour; Gather dough into a ball.
3. Chill several hours.
4. Roll a level teaspoonful of dough into balls.
5. Dip into slightly beaten egg white, then roll in almonds. Place on ungreased cookie sheets 1 inch apart. Press an indention with finger in each cookie and fill with jam.
6. Bake in oven 300 degrees for 20 minutes or until lightly golden. Cool on wire racks.

This is a recipe that has been handed down through the generations within my family on my mothers side. Its usually served around the holidays. My grandparents lived most of their lives in Pennsylvania and this seems to be very common within the Pennsylvania Dutch community as well. I've been told this recipe originated from Austria where my great grandparents lived. I remember having these every Christmas when visiting. Enjoy!
