Sugar Cookies with Butter Frosting

Sugar Cookies:
1/2 cup butter
1 cup sugar
1 egg beaten
1 tablespoon cream or milk
1 teaspoon lemon extract
2 cups flour
1/2 teaspoon salt
1 teaspoon baking powder

Butter Frosting:
3 tablespoons butter
2 1/4 cups confectioners' sugar
1/4 cup light cream or milk
1 1/2 teaspoon lemon extract (or vanilla for less lemon flavor)

Sugar Cookies
Cream butter and sugar until very light then add egg, cream and vanilla. Mix flour, salt and baking powder together. Slowly add to creamed mixture and mix thoroughly. Chill overnight. Roll out a small quantity on floured board. Cut with cutters and place on greased cookie sheet. Bake about 5 minutes in 350 degree oven then remove to racks after cooling a few minutes. When completely cool, frost and decorate.

Butter Frosting
Cream butter. Gradually add half the sugar. Beat in 2 tablespoons cream(or milk) and lemon extract (or vanilla). Gradually add remaining sugar. Add enough cream to make spreading consistency. Add a few drops of food coloring if desired.

Every year in December my mother makes thousands of cookies to give away as gifts to family and friends. She makes everything from crispy mocha double chocolate cookies to gooey peanut butter bars. But, her sugar cookies are everyone's favorite. In the shapes of snowmen, reindeer, bells, stars and candy canes these are not your average, dry, cut-out cookies you get from the grocery store. The chewy, melt-in-your-mouth goodness with a hint of lemon is so addicting you will definitely want them more than once a year! Luckily for me, she was also a first grade teacher and has cookie cutters for every holiday of the year. Thanksgiving, St. Patrick's Day and Flag Day are all fantastic reasons for some homemade cookies!
